Homemade Gluten-Free Almond Paste

When I went to make Italian specialty cookies like my Gluten-Free, Dairy-Free 7-Layer Rainbow Cookies, I realized finding Almond Paste without gluten was a challenge. My goal was to make an almond paste that was easy to make with as few ingredients as possible. My recipe has just three ingredients: almond flour, confectioners’ sugar and an egg white. If you want a more pronounced almond flavor, add in up to 1 teaspoon almond extract. To store, roll the almond paste into a log and tightly wrap in plastic wrap to seal completely; refrigerate for up to 1 week.


HOMEMADE Gluten-Free AlMOND PASTE

Makes about 12 ounces
Prep Time 2 minutes

INGREDIENTS
1½ cups finely ground blanched almond flour
4 ounces (1 cup plus 1 tablespoon) confectioners’ sugar
1 large egg white 

DIRECTIONS
Pulse the almond flour, confectioners’ sugar and egg white in a food processor to combine.
